Your New Favorite Treat: This PB + Kale Smoothie

This smoothie is my favorite. While I like a typical green juice or green smoothie, the addition of peanut butter + kale + oats changes the game! It makes for a wonderful sweet and healthy treat!

“Kale is a nutrition superstar due to the amounts of vitamins A, B6, C, K, folate, fiber, carotenoids and manganese it contains. One cup of raw kale has just 20 calories. The Department of Agriculture’s MyPlate recommends any child and adult who is over the age of 9 eat at least 1.5–2 cups of dark-green vegetables every week” (Mayo Clinic).

Kale has a nice, strong flavor, but in this recipe it’s relatively masked and you still end up with a tasty flavor. Moreover, you’re getting nutrients!

Peanut butter is relatively healthy. While you should watch out for too many calories, it can be great in moderation.

“Peanut butter is loaded with so many good, health-promoting nutrients, including vitamin E, magnesium, iron, selenium and vitamin B6. Research shows that people who regularly eat nuts and nut butter, including peanut butter, are less likely to develop heart disease and type 2 diabetes” (Denver Health Medical Plan).

Peanut Butter makes this smoothie a masterpiece!


Ingredients:

  • Peanut Butter
    • 1-3 tablespoons smooth peanut butter, any brand, depending on your preference, and how PB-like you want the end result to end up to be! Peanut butter can be caloric, but worth it and full of good fats!
      • (I used 2 tablespoons of peanut butter)

  • Kale
    • 2 cups Kale (remove all stems and keep only the leafy part, or you can buy packaged kale).

  • Apple
    • One apple, de-core and slice.

  • Oats
    • (you can also do a Banana, but personally I like Oats as I am low-key allergic to banana and prefer the taste of oats!). This ingredient thickens the smoothie.
    • 1/4 cup of the oats, any brand

  • splash or 1/4 cup of regular almond milk
    • or milk of your choice.

And lastly,

  • 4 ice cubes.

Instructions:

In a blender, place all ingredients in any order. The kale should be washed and ready before placing in blender. Additionally, wash and de-core the apple, and slice.

So, you place PB, Kale, Apple, Oats, almond milk, and ice cubes into the blender and blend.

Suggestion: I loved how the smoothie came out, but I suggest placing in the fridge for 20 minutes or so to get it colder — mine wasn’t as cold as I’d like it to be!

The end result is tasty and quite a filling treat. You have now gotten a great serving of a dark, leafy green vegetable and a fruit!
